Tavë Kosi (Albanian National Dish)
Description:  Of all the food I had in the Balkans during the 2022 trip, I loved Albanian food the most. Unfortunately, I didn’t get around to recording the best dishes so when I got home, I selected this one to try. The yogurt / egg topping makes the dish unique and it tastes great.

1 Finely chop ,.
2 Cube into 1" pieces. Cur away most of fat. Season with ,. Toss with 1⁄4 cup .
3 Heat 3 tbsp. and the in a 8-qt. saucepan over medium-high heat.
4 If nessesary, work in batches. Cook turning as needed, until browned, 10–12 minutes.
5 Add ,, and bring to a boil. Reduce heat to medium-low; cover, and cook until rice is just tender, about 18 minutes
6 Meanwhile, melt remaining in a 2-qt. saucepan over medium-high heat. Whisk in remaining 4 tbl ; cook until smooth, 2 minutes. Remove from heat.
7 Preheat oven to 375°.
8 When meat mixture is done cooking, stir in ,,. Transfer to a 9" x 13" baking dish and set aside.
9 In a small mixing bowl, whisk together ,, and , until smooth. Add to sauce pan and mix.
10 Pour yogurt sauce evenly over lamb mixture.
11 Bake until golden and the lamb is tender, about 55 minutes. Rotate pan halfway so yogurt mixture browns evenly.

Tonight’s meal was much better with lamb leg instead of a shoulder. While there was still some fat, it was easier to cut away and getting enough meat is no longer an issue. I changed the recipe to cut the meat into 1” cubes instead of 1 1/2” cubes.

Wonderful tonight and with some practice I cut an hour off the first time. Lamb shoulder may not be the best option with the fat and bones. 2 lb packages netted only 1.3 lb.
