Spinach Gratin
Description:  I made this vegetable recipe for the first time with the intent to freeze and have with future meals. When I cook a new recipe, I generally adhere to the original ingredients and measures, then change according to my own tastes with future preparations. I reduced the 1.5 cups of heavy cream to 3/4 cup and the results were fine.

Directions

Directions:
1 Cut stems, dice , mince , divide .
2 Cook a large pot of boiling water for 30 seconds until wilted. Rinse the spinach under running cold water until cool to handle. Drain it in a colander and squeeze out excess water. Set aside.
3 Preheat oven to 350°
4 In a large skillet, melt over medium-high heat until it turns bubbly, about 1-2 minutes. Sauté , until fragrant, about 2 minutes.
5 Add and stir well to combine. Stir in and half of . Stir constantly and turn the heat down to medium. Bring the mixture to a simmer until smooth and thickened, about 4-5 minutes. Season with , to taste.
6 Stir in and toss well to coat. Cook for 1-2 minutes until heated through.
7 Transfer spinach mixture to a 9-inch square baking pan and top with and remaining half . Bake for 20 minutes until cheese is melted.
8 Carefully broil on low for about 5 minutes to turn topping into a golden brown. Watch out that it does not burn.
9 Serve

My initial impression is that the salt and pepper overwhelmed the rest of the dish. If verified, reduce both.

Cooked a double recipe for Christmas eve. Cutting steps off spinach took forever. We'll see who likes it.

Very nice side dish. For next time I reduced the pepper amount from 1/2 to 1/4 tsp.
