Homemade Hamburger Helper
Description:  When I first moved in on my own, Hamburger Helper was a staple. It was a quick and easy recipe and I enjoyed it – however unsophisticated the boxed meal might be. Eventually I moved on to real cooking and left it behind. Still, I remembered it fondly and decided to find a recipe to make a version from scratch. Here it is.

1 Chop into 1/2" pieces. Mince . Chop . Shred .
2 Heat a large sauté pan over medium-low heat, heat and add . Season lightly with ,.
3 Cook until the turns light beige in color and begin to caramelize, 20 to 25 minutes.
4 Add and cook until fragrant and starting to brown ever so slightly, about 2 minutes.
5 Increase heat to medium-high and add and . Use spatula to break up the meat into smaller pieces. Continue to cook until the liquid has mostly evaporated and the meat starts to sear and develop a crust on the bottom of the pan,12 to 15 minutes.
6 Carefully drain off most of the fat, leaving a little in the pan to keep the meat moist.
7 Add . Reduce until the mixture is almost dry, about 10 minutes.
8 Add the ,,,, to the pan. Mix until combined and bring to a boil over medium-high.
9 Once the mixture is boiling, add the and cook until al dente, stirring often, about 9 minutes.
10 Reduce the heat to low and add ,, stirring until completely melted and sauce is thickened.
11 Remove the pan from heat, stir in and season to taste with salt and pepper. Serve immediately.

Really wonderful tonight but since it is so high in calories, I was good so the portion was small.

This recipe is just bursting with flavor from the meat, bacon, cheeses and spices. I tinkered with the original to reduce some calories and get just the right about of heat for myself. Careful, others may want to tone done the Redhot sauce.

The original recipe called for ¾ cup heavy cream which is a lot of calories. I reduced that to ½ cup but that made the meal a little too spicy for me. Next time I’ll keep the ½ cup heavy cream but reduce the hot sauce to ¼ cup. Also, for health reasons, I replaced the hamburger meat with ground turkey.
