Baked Sea Scallops
Description:  This is one of my favorite dishes. I brought it to a pot luck dinner in 2021 and there was much raving. Four tablespoons of butter help make this very tasty and it goes great over pasta.

Directions:
1 Bring to room temperature.
2 Chop ,,mince .
3 Preheat oven to 425°
4 Boil water for pasta.
5 Melt .
6 Place ,,, in a bowl. Stir gently to combine
7 Season with ,.
8 Cook .
9 Pan casserole dish with , and transfer mixture to it.
10 In a separate bowl, combine ,.
11 Sprinkle bread crumbs mixture on top of scallops.
12 Bake for 12 minutes
13 Top with and bake an additional 4 minutes, until crumbs are brown and scallops are done.
14 Serve over .

There was something missing when I thought back about this recipe a year later. With four tablespoons of butter and 3 of olive oil, it is a very rich meal. This time I served it over 2 oz of pasta, and it was much more interesting. One or one and a half oz may be enough for next time.
